<p>Una din retetele vechi din Dobrogea de nord, este cea de Cherdele. Ce  sunt cherdelele ? Mai pe intelesul nostru, este in fapt o placinta ce  se prepara in general atunci cand se facea paine in casa, folosindu-se o  parte din aluatul de paine.</p>
<p><strong>Aluatul: </strong>apa, sare, drojdie si faina. Se adauga o cana de apa, se da  un praf de sare, un cubulet de drojdie si se amesteca. Se toarna faina  si se framanta pana se obtine coca. Se lasa aluatul la dospit, acoperit  la caldura pana creste.</p>
<p><strong>Umplutura :</strong> branza amestecata cu ou si cu verdeata tocata marunt (marar si foi de ceapa verde).<span id="more-13769"></span></p>
<p>Din coca dospita se intind foi de latimea de aproximativ 10 cm, pe  mijlocul acestora se adauga umplutura, se pliaza pe latime si se  portioneaza in bucati. Se lasa 10-15 minute la crescut si apoi se aseaza  pe o tava unsa cu untura (sau ulei). Dupa aceea, bucatile se ung cu  putina untura (sau ulei) pe deasupra si se da tava la cuptorul incins in  prealabil. Cand aproape s-au copt, se scoate tava din cuptor si  bucatile se ung pe deasupra cu un amestec de lapte cu ou. Se introduce  tava la loc in cuptor si se mai lasa pana se rumenesc.</p>

<p><span id="more-13714"></span>Modul de preparare a retetei:</p>
<p>Placinta dobrogeana se face atat in  varianta cu branza dulce si stafide, cat si in varianta cu branza  sarata.</p>
<p>Intr-un vas incapator punem branza dulce, doua oua, coaja de portocala  taiata bucatele mici si stafidele. Amestecam bine pana cand se  incorporeaza toate ingredientele si apoi adaugam zaharul si esenta de  vanilie.</p>
<p>Daca folosim foi de placinta din comert, trebuie sa lasam din timp foile  la dezghetat la temperatura camerei. Topim untul la bain-marie (sau la  cuptorul cu microunde) si apoi ungem foaia de placinta cu unt topit.  Dupa aceea punem cateva linguri din compozitia de branza dulce cu  stafide pe jumatate de foaie si intindem uniform, apoi pliem foaia pe  jumatate. Ungem foaia de placinta cu putin unt, stragem/incretim  placinta si o punem in tava, apoi repetam procedeul cu toate celelalte  foi de placinta. In pachet au fost 12 foi si am folosit cate doua foi  pentru fiecare placinta.</p>
<p>Inghesuim in tava toate cele sase placinte si, daca ne mai ramane unt  topit, ungem cu acesta placinta din tava.</p>
<p>Punem intr-un vas iaurtul, adaugam cele trei oua si restul de 100 g  zahar. Amestecam bine ingredientele pana cand se topeste zaharul. Pentru  o placinta dobrogeana mai aromata, optional putem adauga si o lingurita  cu esenta de vanilie.</p>
<p>Turnam compozitia de iaurt peste placinta si incingem cuptorul. Lasam  placinta dobrogeana la cuptor pana atunci cand compozitia de iaurt este  absorbita si se rumeneste frumos. Timpul de coacere estimativ al  placintei dobrogene este de aproximativ 25-30 minute, la foc mediu.</p>
